I'm thinking of using one based off the tallarn models but I'm not sure of the best load outs? Two many years playing cadians has made me greedy

I don't really understand the question. The load out doesn't depend on what models you use, there's only one guard codex (unless you go FW for more rules) and the load out of vets doesn't change wherever you go.

There are some standard, effective uses for vets:

-Mech with all plasma (lasguns) as heavy infantry/MC hunters
-Mech with all melta (shotguns) Tank hunters or cheap heavy infantry hunters
-Harker with plasma and a HB coupled with forward sentries (lasguns) harassment unit that can stroll onto an enemy objective on turn 5. 2+ cover save is hard to dig out
- In a Vendetta with all melta (shotguns) Tank hunters dropped in a nice position. Also potentially late game scoring if they survive long enough.

Depending on points, putting demolitions on melta vets works quite well. They make great special weapon carriers. BS4 with 3 weapons in a squad is pretty unusual and can put the hurt on whatever their intended target is. Occasionally I use full flamer vets when I'm playing low points games but generally a PCS is better suited to this option.

Weapons to avoid: GLs (they're just awful). Heavy weapons (the vets need to be moving to get the most out of them, the exception is Harker, since once they're in cover, they won't move a lot). Heavy flamers (too expensive). Snipers (too weak and prevent movement).

Star Trek taught me so much. Like, how you should accept people, whether they be black, white, Klingon or even female...
