I am interested in playing Dungeons and Dragons or Dark Heresy. I know something about the rules for both, but I have never role played before. Can someone tell me what it is like?

well.. its hard to describe it. i would show you a demoish version of a diffrent 40krpg, i never really played dnd so i cant really help you on that one, but if you get a group ill gladdly join

... and that's about the same regardless of the RPG you play. They all feature different settings and different rules, but it all comes down to "people describing what happens".
And it's fun.

Short version (for me): if you want to make a story together and hang out improvising a narrative and creatively solving problems, with some fighting, tabletop RPGs are for you. (I want to emphasize improvising: I've never seen a campaign even mostly follow what the players are supposed to do, regardless of prefab vs. DIY.)
If you want to kill monsters and fight things and have a vaguely relevant narrative, play a wargame campaign or a computer/console RPG/adventure.
Not saying you can't just fight stuff in a TTRPG, it's just not really great at it: I don't read action books because there are action movies, which do the same thing but better and more succinctly. I will read comedies or dramas because they'll convey it well enough.
The only reason to mostly fight stuff in a tabletop RPG is if you have a really resourceful/mentally agile GM who's ready to describe and figure out your ridiculous combat on the fly, but a GM who's good at that would probably be great for a more narrative campaign anyways.
