I am really not a fan of the Soul Grinder model, but I can see the appeal of the rules (and I could probably use one as a Defiler with my friends in my Chaos Marine army as well). So I am considering getting one but modelling it much differently to standard.

I was hoping to make it more of a Fiend of Slaanesh / Scorpion posed figure and to that end I have a few questions. Do you get two big crab claws mechanical hands in the kit? Or just one? Would there be a LOT of modelling work required to tilt the torso forward towards horizontal? I was thinking of using one of the arms as a tail-esque limb as well, does that seem possible?

Has anyone seen any examples of Soul Grinders that have something liek the pose I'm talking about?

One crab claw per kit, if you mean the part with the guns poking out of it. Try looking up kitbashed brass scorpions people have done with defiler kits to see how they made scorpion tails from the legs, though you might need 2 kits to pull it off.
As far as the torso, its a large flat section that fits flush on top of the mechanical platform, so it would take a pretty significant amount of altering to get it in a more prone position.
