Hey all. My FLGS is starting a Mordheim campaign, I've never played before. I'm interested in playing Carnival of Chaos. I'm not concerned about being optimized to the limit, but I'm wondering if somebody can give me some suggestions for play style / lists.

I'm also looking for ideas on where I should be looking to make models from. Thanks.

Can't help you, our local area doesn't allow Carnival. :-\

Original models are still available through GW Australia, which may prove about as expensive as buying them OOP from eBay or the like.
That said, the new nurgle plastic minis are all dead easy to convert, and nurglising anything isn't too hard with a small amount of GS, so that shouldn't be an issue really.

Don't fuss too much about the list. The standard contents of the old box.
2 Heros, Strong man and 5 goons does well enough. Think of them like a possessed band without the gribblebeast and you'll do fine.
Also wear a jester hat when playing, the jingling will give you the psychological edge.

Just a quick note, I always thought the Nurgle Champion fella would make a good strongman.

Spoiler:

Greenstuff the helmet into a jester-style hat, turn the axe into a hammer or giant dumbbell or something, maybe cover up some of the armour plates.

How to paint Skeletons the way I do if that's something you'd fancy trying.
