I'm considering adding Nemesor Zandrekh to my list and because I place way too much importance on the lore, I feel the need to make my army adhere to the code of conduct that everyone, but Zandrekh, loves to ignore oh so much.
My question is, has this code of honour ever been described in detail anywhere?

Not directly described. What is known is only from snippets. It appears to be a code that applies only to battles between Necron nobles and others they consider worthy of being treated to the same standards.
For example, it appears that the Necrons abiding by this have to give prior notice of intent and give a period of time for the enemy to back down or withdraw from the area of interest. If that is not done, then the Necrons attack. Assassination and ambush (as described in the Necron Lord entry) are forbidden. The Deathmark entry specifically mentions Deathmarks being forbidden as a result. The Zahndrekh entry also mentions that he disdains the use of Wraiths and ensures that enemy commanders are captured rather than killed. The Anrakyr entry mentions how the option of honorable surrender can be extended to a defeated enemy.
So if you were to make your army adhere to this code then Wraiths and Deathmarks should be off-limits entirely.

But since Zandrekh is under the impression he's fighting rebel Necrontyr, it's pretty clear he extends those formalities to all enemies.

His entry says he does not resort to such strategies but his subordinates have no compunction to do so. So it seems his subordinates can circumvent him. Zandrekh is the eccentric boss that whose eccentricities are humored when he is around and promptly ignored when he is not.

Given that Necrons have perfect recall most of the time due to being golem robots, or at least easy access to computers, and given their now extremely extensive lifespans, I'd say that the code of honor would be extremely long, labyrinthine, full of exceptions and special circumstances, incredibly arcane for outsiders, and mindbogglingly comprehensive. Feel free to make up rules not already outlined in the fluff as you go along.

Their code of conduct is based on pre-Transference Necrontyr society, not anything at all after they became Killer Robots.
What snippets we have of it seem to be a mesh of Bushido and the Codes of Chivalry at their highest level.

I found a personal fluff loophole for using deathmarks/wraiths as Zahndrekh, which is, simply put, bring Obyron as well. Obyron is good at getting the senile old coot to act properly commander-ish.
