I wanted to use some henchmen in a Grey Knights list of mine, and I was wondering if anyone had any info on how I should make them look? Are they like space marines without helmets? Are they like deathwing paladins? I'm just not sure what bits to use to make them. All suggestions/advice is/are appreciated! Thanks!

Henchmen are mostly normal humans, but it depends on which kind you wanna take. Regular warrior acolytes could be represented with imperial guard troops, deathcult assassins can use Dark Eldar wyches, daemonhosts can use whatever you want, etc. Assuming you don't wanna use the actual models for henchmen, there's plenty of modelling options for them all.

I actually just came across the henchmen models. They're a bit too expensive for me. I like the look of the wyches, so i'll probably get some of those. It was suggested that I use scouts for warrior acolytes, do you think that would be a good idea?

Before you think about building any henchmen look at their options in the codex, that should give you an idea of what models you can use/would like to use for which types of henchmen.

Well I like the Death Cult Assassins and the Crusaders, but I'm unsure whether or not they have guns. If they do, that's great, but if they don't, I'm not sure how I should play them..

Neither of those do come with ranged weapons. I've not actually seen many Crusader conversions, but a quick google gives a couple. Lots of people use Wyches for Death cult assassins and they are a good option.
Off the top of my head Brettonian Men at Arms shield with some Inquisitorial symbols would work as storm shields for crusaders and spare Grey Knight falchions would work as power weapons. Stick them on a regular Cadian if needs be and you've got a decent crusader.

Hey,
I went for a hive-gang theme for my henchmen. You can get nice riot shields for crusaders from Maximini and rebreather heads from victoria miniatures. For the DCAs, I used hellion bodies, wych legs and hellion hellglavies, with the blade replaced with catachan swords, it worked pretty well but you can go with any theme you want with henchmen, the imperium is pretty diverse after all!

I'm in the process of building a retinue of henchmen and I am using Kasrkins as warrior acolytes and maybe a Sister or two. I am also working on a few other custom servitors and whatnot.

They're a little big, but i'm using the Dreamforge Eisenkern Troopers as proxies for my henchman. They look awesome next to the GKs and they are quite affordable. All plastic and easily convertable too...

Henchmen vary. You can kit bash to your hearts delight. I have done a lot of work doing conversions for my henchmen for my inquisitor for my army. The best advice I can give though is that when you do a Inquisitor have a theme in mind and build your henchmen to go with.
