So. Never minding GW stores themselves. Where else might I not be allowed to play my army if I use non GW bits? I'm thinking of keeping all the weapons strictly right, but lots of head swaps, and also putting non GW figures in the turrets driving my Chimeras, LRBTs and possibly Vendettas. Is this gonna prevent tournaments if that's something I want to do down the road ?

I don't know about the UK but GW stores in my local area doesn't seem to care much about alternative bits so long as the base is GW.

There are no Tournaments i can think of that will out right ban non GW bits ether so long as its WYSIWYG it shouldn't matter at all.

Outside of a GW shop, anywhere that objects to cool models (unless it is blatant, WAAC MFA) isn't somewhere you want to be playing.

if its 50% or more GW you should be fine

Seconded. No problem at all playing against an entire non-IG army so long as it's obvious what's what - which is very doable.

Yes. I've heard that fifty percent rule before but never know whether it's fifty percent of the army or fifty percent of each model...?

Why would an independent store/club have a rule like that?

Think tournaments have that rule a fair bit. Just something I've heard a bit.

I think back in the glory days when GW got involved in tournaments that was probably a rule, but those days are long gone.

Check with the TO ..always check with the TO ..each tourney has its own set of rules and they are getting further and further from GW's previous set due to GW no longer backing Tourneys.
