Just because it has the Minotaurs' symbol, or because the ecclesiarchy's attack dogs always get the best wargear? It says right in the description that they are extremely rare outside of the Imperial Fists.

The latest ia says they are fully stocked with terminator and mk.8 armor, which are two things first founding chapters have a hard time getting. So if the Taurs can have a full chapter decked out in mk.8 armor then I'm pretty sure they have no problem fielding that land raider in droves.

They might be fully stocked, but that doesn't mean every Astartes has access to it.
Go with whatever Landraider varient you wish, I'm sure the Minotaurs have at the very least one of each type.

If you read the fall of Orpheus it says that every Minotaur has access to mk.8 armor and its not unheard of them to deploy at full chapter strength in all mk.8 and cataprati terminator armor. Not even the ultra marines and imperial fist can boast that.
I guess it shows it pays to be the high lords personal dogs
