OK, I am entering an escalation league. We can adjust the list at the 1000 pt level.

I am considering three list to start:

1: St Celestine and two ten woman squads of battle sisters***
I am wondering if St Celestine can do her job without an escort.

2: Canoness* ,a Priest**, and two ten woman squads of battle sisters***

3: Canoness* ,a Priest**, one 15 woman squad and one 5 of battle sisters***
The Canoness and Priest hang out with the 15 woman squad, I like this one, but am afraid the five girl squad will be too small.

* Power maul, combi-flamer, Rosarus and book
** Combi flamer, Litanies
*** Sister superior has a combi-flamer and a Power Maul, squad has a flamer and a multi-melta.

I have yet to make or convert the priest so I could as of yet make him different, but I like the idea of adding yet another flamer template to the big squad on one turn. I know it limits his use of smash not having a power weapon, but I would think I would want him singing the twin linked armor saves song if in melee.

Go with Jacobs for HQ. He is by far the best HQ choice for his cost - which is lower than the other options, he also fills part of the role of a priest for several squads, and therefore saving you more points.

With the rest of the points I'd go for 20-30 sisters, in variable squad sizes, and then some melta weapons. Personally I don't find the flamers all that useful when everyone has a bolter, you have so much anti personnel fire already.

Having a bubble of 30 fearless power-armoured nuns can be pretty difficult to remove.
