So, I'm trying to write a list usingsome gepanzerte panzergrenadiers, but all I can find are riding in sd kfz251's and 251c's. I can't find any in the free lists on easy army that use the later production model of sd kfz251/D. Is it different in game or just an aesthetic thing?

They should be the same in game. I just checked both my Grey Wolf book and the Grey Wolf Gep. PG list on Easyarmy and the stat line for the transports is just "sd kfz250/1 or 251/1". I'm guessing this means they're all the same, which makes sense as the biggest changes between the A,B,C and D models were mostly just slight variations that wouldn't have an effect in game.

Adrift within the vortex of my imagination.

Dont bother worrying over it, the Wehrmacht didnt.

Earlier versions of the sd kfz250/1 series were used alongside later models. some carriers got lucky and didnt get destroyed in earlier battles or were used by garrison forces. As things got worse for the Reich there was a pecking order of seniority ans those with more clout would requisition materiel from other units.

IIRC the stats dont change so as long as the company has a majority of carriers from the correct type it can mix it up with others. You caould even add a captured M3 or two.

n'oublie jamais - It appears I now have to highlight this again.
