My group plan to build and convert minis from 40k into special forces/gangs/raiders. Infinity looks like a great system to play with and I was wondering does anyone else use 40k models as proxy?

it happens, but from what I've seen people replace the proxies with the real thing if they continue playing for any length of time.
Try the game, and if you like it, start your Infinity collection-- sell off the 40k stuff to pay for it  The minis are spectacular.

I used my Tau for the first month of playing, Kept using the Crisis suits as REMs for a long while after that too since REMs can be really comparatively expensive to other Infinity figures

I mean, it would be if you want to play in any actual infinity tournaments, etc. But if you just want to play with a little home group then it should really even matter....

If you are only using the rules aspect of it to improve a 40k game, fine.
It's not like 40k has decent rules anyway (not since the early to mid 90s).
I've seen lots of people play the rules using 40k models whilst they get used to the rules/learn them - and decide which faction(s) to collect.
Wouldn't fly in a tourney setting, or with some of the more OCD gamers, but I'll let it slide.

Infinity is a great game but if you're just looking for a ruleset for your 40k models then you might also have a look at In the Emporer's Name. It's a small fan-made skirmish game for 40k that works quite well and it's free.
Pulp Alley is my personal favorite for small skirmish games. Although it's written as a pulp game (think indianna jones), it works amazingly well for everything from westerns to steampunk to sci-fi to modern. It's very fast and simple in a way that encourages smart play over rules-lawyering and the team/warband creation is very customizable. Pulp Alley is a bit RPG-light in the sense that battles are very narrative/scenario based where you typically must complete objectives (many of which are skill based, not combat based) instead of just trying to shoot it all out, and the system the game uses builds much of that narrative as you go through a match which can be one-off games or linked campaigns where you gain experience. All combats are opposed rolls and I absolutely love the way it handles wounded characters and degrading stats. It's fast, it's fun, it has just enough depth to keep it interesting and it's so customizable it can cover pretty much any setting. Quick-start rules are free but don't include the rules on creating warbands or playing linked campaigns. Full rules are $10 and there is an expansion for $10 as well.

As much as I love infinity as a rule system, I can't help but feel that ignoring the miniatures is a huge disservice to yourself. I get that you want more ways to use your 40k stuff, but sometimes starting fresh with a new game is good for your hobby.

I have played both Necromunda and Infinity. They are really nothing alike, apart from the skirmish sized forces.
But it is free to try, and I encourage you do do so. Have you found the quickstarter rules yet? If not, here http://www.beastsofwar.com/wp-content/uploads/Infinity-QuickStartRules-V1.pdf
This is enough to play through and get a feel for the game.

Don't worry a good amount of Infinity players started that way. Then they see a model they must have and another and before you know it there is no GW models on the table.
