Typically, Blood Bowl tournaments play 'Resurrection Style', meaning your players will not retain injuries, will not gain SPP, nor will anyone roll for improvements between rounds. You show up at the tournament with a roster, and you play every game with that exact same roster. In my opinion, this is the best approach around for several reasons.
For one, player death, while uncommon, isn't that uncommon. Throw in MNG's and other injuries and that means half of every casualty inflicted should result in a missing player. To make matters worse, every injury a team sustains makes it even more likely they'll sustain further significant injuries later on (since, playing with less players, they are forced to expose/unable to protect important players... Run out of Linemen, and eventually you have to set positionals on the line). Playing in a non-resurrection tournament, most any agility team (Elves, Skaven, etc) would be hard-pressed to make it to game 3 without a healthy number of injured players. Meanwhile, the bashy/high AV teams (Orcs, Dwarves, etc) will still likely be in perfect shape by game 3. This is not so fair.
In short, a non-resurrection tournament is going to be "bash or lose". There's a case to be made for a tournament like that, but the downsides are very hard to ignore. A coach who loses their first game and takes a bunch of casualties in the process is going into their next game with a significant disadvantage. Probably a nearly unwinnable situation, and one which likely will result in even more injuries. And then they've got another game after that? Yeah, sounds like a bad time.
With resurrection style, everyone has a fresh start in their next game. They might have gotten murdered in round 1, but round 2 they get another chance. Keep hope alive, even for the hopeless, and everyone should have a good tournament, even the losers.
Since you mentioned scoring, I'll also suggest you come up with other tiebreakers besides number of TD (since this isn't a great metric of a team's success, and will often still result in a tie). I've seen several different scoring systems/tiebreakers used, but my personal preference is something like:
Win = 3pts, Tie = 1pt, Loss = 0pt
Most points at end of round 3 is the winner.
Tiebreakers:
TD differential (difference in TD scored vs. TD against)
...If TD diff is tied: CAS differential (difference in CAS inflicted vs. CAS sustained)
...If CAS diff is tied: # of TD's
...If # of TD's is tied: # of CAS
...If all that's tied, play rock-paper-scissors. Best of 3.
