Obviously the biggest difference of the Angels Encarmine colour scheme is that of Sang Guard and Death Company (who are in white), but I can't find a definite answer to weather they follow the conventions of their precursors helmet colours (red for tac, yellow for assault, gold for vets, blue for devs).

In the 5th ed codex, the Angels Encarmine model show has a red helmet, he has a jump pack and a power sword suggesting that it's either a Assault marine Sargent, or a Vanguard Vet, which follows neither if the BA conventions.

Anyone know of the correct helmet color conventions for Angels Encarmine?

I'd say go for what you think looks best. If you've done your research and you can't find anything, you may as well go with what you like the most as it seems to have been left pretty ambiguous .

The Eavy Metal team have been mucking things up for a few editions now so I tend not to set much score by them.

I assume they are meant to follow Blood Angels in regards to helmet markings since the art picture on the same page has them in standard Blood Angel markings instead of using regular Tactical arrows like the Angels Sanguine and Flesh Tearers.
