So...we're real suckers for persistent open world games. Or open world-ish. By "persistent" I mean e.g. the entire map being divided in zones that can be conquered, where you can build bases or base camps in etc....as in:

- GTA San Andreas...where you could take over entire sections of the city by winning gangfights. If you won, the territory would from this point on be yours and be colored green on the map.
- Dragon Age: Inquisition...where you can create camps and collect stuff to conquer territories and receive permanent bonuses.
- Red Faction: Guerilla...where you could fulfill missions and destroy buildings to permanently acquires territories and snatch them from the AI.

My wife and I are both terrible completionists who would gladly spend hours just to get that last camp location and color the map.

No online multiplayer, we already have one attention-seeking child on our own at home

Saints Row 2 did this.
Remember how you can take territories in Saints Row 3 and 4? Well in SR2 the AI would try to take them back.

Far Cry 3 also does something like that, except there's no retaliation.

Just Cause 2 has a similar mechanic iirc.

Just Cause 2, Saints Row (I recommend 3 or 4 the most) series... other than that, the one I'd recommend the most-- RF:G -- you already have.
