Apologies if this has been answered before, but can you have a unit of Varanguard where each member of the unit is armed with a different weapon? The warscroll seems to suggest this - 'Each member of the Varanguard wields either...' - but I suppose that could be interpreted that they wield one or the other? I've got a unit of three where each has a different weapon, but I wonder now if I should field them as three separate units of one?

It's each individual member. If it was the whole unit, it would be worded as such like other unit Warscrolls. They are special in that regard.

Though I do prefer them with all Ensorcelled Weapons when Archaon's on the field.

Yes you can mix. Although with up to 3 I suggest Ensorcelled Weapons and fore 3 and more the war glaives.
