Ok, so I was looking through the 40k wikia, and I noticed a HUGE amount of imperial knight houses that had no information (House colors, war cry, home world, that kinda stuff.) Would it be in the realm of possibilities to flesh out these bare bones knight houses ourselves?

There's so much wiggle room that you can always make up your own patterns and backgrounds. Just don't get ridiculous with it, and people will like it instead of argue with you over it.
