My group usually goes for 2v1 rather than 1v1v1. The reason being that it's all too easy for two players to gang up on the third or for the rolls against the third player to go south early on and then that guy is basically out of luck for the rest of the game.
If you want to go big, I suggest either doing a 2v1 or else arranging multiple tables in such a way as to make it difficult for two players to gang up on the third (assuming you're going for apocolypse sized conflicts).
Alternatively, try doing something like zone mortalis. The walls will make it harder to gang up on one guy, and the smaller game size will balance out the fact that you have three players instead of two.
Also, keeping the same turn order in a 3-way can cause problems. For instance, the last guy to go will likely get shot up/assaulted twice before getting to take his own turn (assuming the other two players are distributing their offense evenly among both opponents.) Consider rolling for turn order at the start of each game turn. So for instance, turn 1's roll off might result in the turn order going player A, player B, player C. Then, before the start of game turn 2, you roll again and determine that it will now go player C, player A, player B.
