I am new to 40k and love the look of Ad Mech and Skitarii and want to use Imperial Knights too. Is it a good idea to jump right into this kind of army or is it rather advanced?

It is rather advanced. I'd recommend checking out Tactica Mechanicus in the tactics section.
Most of the difficulty is in movement and remembering your army special rules. Each unit has a lot of special rules, and remembering them all is important.
