I'm looking to get into World Eaters for 30k but have no idea where to start list wise. I play World Eaters in 40k and thought I'd go back and make the loyalist version for 30k. Any list I build for it I'm not really happy with because I feel like it's missing stuff compared to 40k. Any guidance would be great. I'd like to try the red butchers out if possible if they are good.

Red Butchers can only be taken by Traitor Forces (as denoted in the books by an Eye of the Warmaster symbol on their unit entry). Fluffwise they are mad, frothing lunatics ready to have their heads exploded at arms length by their own legion and would not fit thematically. They are also always easier to strike at in melee.

A lot of World Eaters battle reports I have watched tend to run Gahlan Surlak and a big unit of Inductii tacticals, but as you would expect, he is Traitors only as well.

You get Shabran Darr and Endryd Haar (Darr & Haar; funniest sounding joint-command ever). Ultimately you get the same delivery options available to most every legion; Spartans, Kharbdis Claws, Caestus Rams, Land Raiders. Footslogging assault armies suffer greatly to a Meta full of Quad Mortars and Phosphex Medusas and yours will be no exception.
