AoS is a bit different from 40k in that the armies are much less rigid. In 40k you have very clean cut armies (Space Marines, Eldar, Necrons, Tyranids, etc.) and you have the option to mix armies through the allies table.
AoS is much more flexible. You have 4 main Grand Alliances- Order, Chaos, Destruction, and Death. Within these Alliances you have various Factions, which you can see easily divided on the GW site. For instance, the Chaos Grand Alliance consists of the factions Brayherds, Chaos Gargants, Clan Eshin, Clan Moulder, Clan Skryre.... Slaves to Darkness, Thunderscorn, Warherds, and everything in between. When it comes to picking what army you want to build, you can mix and match from any and all Factions within a Grand Alliance. If you want you can also choose to focus on a specific Faction, but some are quite small and are intended to be mixed with.
You can go further down the rabbit hole with the Battletomes. Some are Faction specific (such as Battletome: Everchosen), whilst others are themed around multiple Factions which are allied more closely to one and other (such as Battletome: Disciples of Tzeentch and the upcoming Khorne Battletome, which group together various Factions under the specific god with some additional rules and bonuses). But even with these, the baseline rule is that you stick to a Grand Alliance, and pick from its Factions as you please.
Hope this helps!
