I was planning on getting some alternative bitz for some customised heads etc and was wondering if anyone could tell me how much of a model needs to be original GW parts to be table "legal"

There is no rule. If you're playing in a GW store (not that you'd ever want to do something so masochistic) the employee can set a level anywhere from "still recognizably a GW model" to "no non-GW components, period", depending on how much of a TFG they are. If you're playing anywhere else it's rarely an issue as long as the model is still WYSIWYG.

There is no such thing as a hobby without politics. "Leave politics at the door" is itself a political statement, an endorsement of the status quo and an attempt to silence dissenting voices.

like peregrine said, it depends on where you play. The rulebook doesn't mention it and even if it did, most people would house rule it. I know that if you want to use you models in warhammer world, it needs to be 100% GW

Luckily in Finland the level is basically "if it makes sense it's okay". So even 100% alternative company model is good.

Only place where it's bit stricter is 30k and even there official 30k is not required as long as it looks like a bit.

I usually try to stick to the Rule of Cool.
Then GW it up a bit more. Stick logos and aquilas and stuff on the model. Make it look like an OOP GW/Citadel model.

The official answer, as mentioned, is who is the official, and what do they say.
Playing in a GW store, assume you'll have to explain what it is and how it was made, to the satisfaction of the GW staff there. If you can Greenstuff or kitbash well enough, you'll probably get away with a lot. Prove that the 3rd-party model you have was made using GW-sold GS, and you're golden.

Outside of a GW store (or a hard-core GW-fan tournament decided by the owners/runners) you won't encounter any "law". That's not a real thing. A GW store gets to determine what they allow in their store, because gaming there is advertising their product. Also, their house, their rules.

Beyond that:

1) The bashed unit should be the same size/bulk/etc. of the normal unit (no modeling for advantage).
2) The bashed unit should be readily identifiable as what it's replacing. Don't model on 3rd party lightning claws and say they're a cyclone missile launcher.
3) This one is a point of contention...the model should look like the unit its replacing or at least deliver a Warhammer aesthetic feel/vibe. A lot of people seem to get pissy when someone doesn't want to play their proxy "my little pony" army which consists of something completely unrelated to Warhammer in any way. This is up to the people playing, but there should be a concerted effort to make the bashed unit/model look as if it belongs in the Warhammer/40K world.

I try to keep my models at least 50% GW, but again, depends on your opponent and where you play.

Last I checked GW still sells Green Stuff, literally enabling you to completely customize any part of any miniature they sell.

^ Yep. I used to use these for Fleshhounds, obviously not a GW model and I didnt take them to the GW store, but at my FLGS then I always did.

Spoiler:

I think most people in the tourny circuit have seen that shark/fish daemon army, obviously that wouldnt fly in a GW store.

Yep, an excellent example of all the things I listed above. Looks like the right size, the right look, and easily identifiable. Nice.
