I wanted to put some WW2 weapons as sidearms on my orks, would the mid 19th century stick out too much in 40k?

I dont think so - the Orks use captured peoples to manufacture weapons and the tech of the Imperium varies hugely from world to world and thats not even consdiering independant worlds that have fallen to Ork Dominaiton.

Go for it - it should look cool!
