So my brother and I are coming back to warhammer 40k.

We are going to leave everything, to the dice gods... EVEN the army we start collecting. (Mostly)

He will be selecting his army from the following, Space Marines, Astra Militarum, Tau, Adept Mechanius, Dark Angels, or Chaos Daemons

My choices are, Orkz, Necronz, Eldar, Dark Eldar, Chaos Space Marines, and lastly, Space Wolves

From there, We will try and make our tables to role off of, and hopefully this will lead to our creation of our armies.

Any hints, on where and how to create the tables?

All I can say...is don't. Unless you genuinely love every option on that table you're rolling on. The biggest mistake someone can make in this hobby is buying something they don't love/enjoy. It'll never get painted and will become a huge bore/chore and will be a negative experience.

Just being honest.

Good wording.

I had a problem due to time, and lack of skill painting, right now, I really am just looking into getting back into the hobby.

I don't know what army I want to play, my last experience, I bought a ton of armies, but had no one to play with, or time..

While I agree with this statement, I'll be the devil's advocate for a second. This may actually be a good idea if you're on the fence but enjoy aspects of all those armies. They are mostly all fairly different, both aesthetically and gameplay wise, and you may get 'stuck' with something you wouldn't normally play or paint which may turn out that you really like it! Some of the best times painting things have been for friends with things I wouldn't normally paint for myself.

In any case, it could go either way. You might find something you didn't know you loved playing/painting, or you may get stuck with something you can't stand and waste a whole bunch of time and money. Risk vs reward ;P

Just remember, the dice gods are rather fickle...

If you and your brother are doing it go for classic opponents Nids vs Ultramarines etc.

"But me no buts! Our comrades get hurt. Our friends die. Falkenburg is a knight who swore an oath to serve the church and to defend the weak. He'd be the first to tell you to stop puling and start planning. Because what we are doing-at risk to ourselves-is what we have sworn to do. The West relies on us. It is a risk we take with pride. It is an oath we honour. Even when some soft southern burgher mutters about us, we know the reason he sleeps soft and comfortable, why his wife is able to complain about the price of cabbages as her most serious problem and why his children dare to throw dung and yell "Knot" when we pass. It's because we are what we are. For all our faults we stand for law and light.

So, we rolled for armies..

Tau vs Orkz.

I will be trying to set up the tables today, and after reading the advice..
The tables will only have the models we will enjoy, and that sort.
