I'm going to be playing some 40k for the first time in a long time and I am wanting to make a list around the following models:

Mortarion
Epidemius
Blight Haulers
Plaguebearers
Deathshroud Terminators

I'm well aware that Mortarion is a point soak, but it's a model I really want to use (especially against some Knights I know my opponents have in their lists)

I really want to see what kinds of lists can be made using those models (and maybe some suggestions on other models to toss in to help out?)

Mortarion is the last model i would field to face Ik's they shoot too much in my opinion , btw with only those model im afraid you can just do some casual not competitive lists, how much Pb you have?

If the OP has only those models available, then yes, the army will be relatively weak as it's not possible to get them into dedicated Daemon and Death Guard detachments. Then again, the title mentions a 1750 list, so I'm guessing the OP wants a list which includes all those models. It may not be the absolute most top-tier tournament army out there, but Death Guard running PBCs and Mortarion allied with Daemons with Epidemius and a whole lot of Plaguebearers make a solid army. The Deathshrouds are not the best units out there, I'll grant you that, but other than that the core of the army seems solid enough to me.

OP: The biggest difficulty with a model list that that is squeezing everything you want in to a relatively small army, especially given the restrictions to fit everything into detachments (which is how you get access to goodies like Stratagems and Relics). I take it from the way you wrote about "some Knights I know my opponents have in their lists" that you're looking at one Knight, maybe two, supporting a more traditional force (e.g. Mechanicus, Astra Militarum, or Marines) rather than a full Knight army. On that basis, I would suggest something like the following:

Mortarion
Chaos Lord with Plasma Pistol and Power Axe
Daemon Prince with Wings, Malefic Talons
3 Deathshroud Terminators
10 Poxwalkers
10 Poxwalkers
10 Poxwalkers
Plagueburst Crawler with Plague Spitters
Plagueburst Crawler with Plague Spitters

Epidemius
30 Plaguebearers with Instrument
3 Nurgling Bases

That comes to 1750 exactly. It does have its weaknesses - the Chaos Lord is basically an HQ tax to everything into a Battallion, and the list is light on long-range firepower, instead relying on getting up close and personal to do most of its damage - but this should do fine against most lists that aren't minmaxed and don't have too much long-range, manoeuvrable firepower.

playing Mortarion+Dp i would prefer bloated drones than pbc, they are more aggressive can keep pace with Mortarion/Dp and you need something to distract fire from Mortarion

I misread the OP, thought it said PB crawlers instead of Blight Haulers. But I would disagree with Drones over PBC, the crawlers are almost as fast as the drones and much tougher, which means they'll draw the kinds of fire you really don't want to go to Morty.

OP: I would recommend that you choose to either go pure DG with Mortarion (and focus more on a fast, hard-hitting force) or a mixed force with Epidemius. Taking both means you need to take a little too much filler for a 1750 game; it just leads to your force being unfocused and likely to be stretched thin.

drones fly pbc not they cant follow Mortarion/dp everywhere, i played a lot Dg with Mortarion, pbc wont work, 1st they cant keep pace with flyers 2nd they cant charge stop some firepower then fall back and still fire flamers, every piece must have a precise role in a list, in particular if you play models like Mortarion.
