It's a little unclear to me whether unsuccessful overwatch is treated as a miss (wherein the unit fires) or whether it doesn't even count as a shot going off.
The stratagem says "You can use this Stratagem just before an ASURYANI INFANTRY model from your army attacks a unit that can FLY with an Aeldari missile launcher." You need to declare it before rolling to hit, because that is when the model "attacks".

A "miss" in overwatch is still a "successful" overwatch - you overwatched, you just missed.
Nitpick of the deca-millennium: Overwatch does not hit on a 6+, it only hits on a 6. That's why rules like the Mordian Parade Drill stratagem need to state "These modifiers to hit rolls are an exception to the normal rules which do not allow modifiers when making Overwatch shots – in such cases a result of 7 is also a successful hit."
