I am new to 40k and my wife got me a OOP metal chaplain what is the best way to convert it into a wolf priest.

Bit of a pain I'd think, unfortunately, given the chaplain IIRC has that distinctive skull mask, and the wolf preist generally is bareheaded or with either a wolf skull or standard helmet. Google can find you some tutorials on green stuff for fur to do the various skins and tails on most Space Wolf minis, but for the head, you're gonna have to either find a donor head and slice the chaplain's off clean for the replacement and fill any gaps with green stuff, possibly furred, or do some serious green stuff resculpting on the existing one.

Which Chaplain? I can think of at least half a dozen that are OOP.
Mind giving us some pics so we can actually give some useful info to you please?

Just glue some wolf tails on there and one of the backpack standards that stick up.

I agree with Fajita Fan. Just leave it as-is. He has a skull mask and Crozius, so it is immediately obvious what he is. Maybe add a sprinkling of parts from the SW upgrade pack to tie him together.
What I recommend as well, as to raise up him a little to the height of modern models is to glue a 25mm base on top of a 32mm base and use that to base him with.

You should have a few extra left arms, use one of these shoulder pads and that backpack too.

I wouldn't convert the mini, but I would add Space Wolf specific icongraphy and bitz from the SW upgrade sprues.
