So, perusing the new 9th ed space marine codex.

What are assault Launchers? And my question is not "what do you THINK they are?" What does the book say? Because for the life of me I can't find anything in the 9th ed book that explains what assault Launchers are or why they should be a key word.

They are a keyword that a stratagem works off of.

Things like smoke launchers, melta bombs, and a few other things got the same treatment.

They are the little box like launchers on the land raider crusader and redeemer. They have the keyword to use that strat. Basically, they're like grenades that the vehicle launches at enemy before troops disembark from raider to assault. Nice they actually have a purpose in codex.
