Played our first 1500 point game this weekend so I have a few questions I’m trying to get answers to. After you charge, and all the fighting is done, the two units that were fighting are still engaged with each other. Going into next round, if I don’t want my units to be engaged with the enemy unit anymore, do I disengage just by making the fall back move?

That's correct, although be aware that you must be able to physically move the models away. If he's boxed you in, you're trapped unless you use Desperate Breakout.
