I'm an AOS noob looking for advice. I've never played AOS but I've got a Cities Of Sigmar army book heading my way.

I'd like to run a Cities Of Sigmar army using just human/Empire models, in game terms would this be doable or are the other races required to make a functioning army?

I'm more into the modelling and painting aspects of the hobby so it wouldn't need to be a force capable of winning tournaments, but at the same time it would be nice if they could hold their own once in a while.

Yes, completely viable.
You'll just have to use your Empire/Bretonian knights as Gryphknights though.

COS have been doing here doing fine with empire models though you are losing some strenght. There's some internal issues like dark elf spear/sword guys being same point but superior to freeguild spear/sword but as those are cheap screen/objective campers not crippling issue.

Also big heads up that Cities of sigmar are getting a big update to their human models at some point in the future (next year for certain). So keep an eye on them as GW are bound to rotate out some models and rotate in new ones and all such things. So could be come next year will be a really great year for the human component of CoS

The Cities of Sigmar revamp looks like it's done.

I have the first book and older models that were carried over from WFB. Looks to me that older minis could be used as long as it's clear what they are. That being said, I'm probably going to put them aside and see how the
Old World game works out when released. If I can get a game of AoS in the meantime, I'll play what I have at a smaller scale and consider trying to fit models using the old conversion rulesets.
