Example: I charge several units of World eaters. I fight first, my enemy plays the World eaters "models fight on death" stratagem ("Blood frenzy"). I kill a bunch of models, those models fight back and are removed. Is my enemy now allowed to use the counter offensive stratagem on one of his other units? It seems rather strong if he is basically able to fight twice in a row even though I charged, but I think it might be possible since "Blood frenzy" targets only models and not a whole unit and thus seems to be an exemption to the usual "player alternate choosing units". Is there a general consensus? How is it usually played with the Battle sisters Repentia stratagem that has a similar wording (Desperate for Redemption)?

Rules texts:

Blood Frenzy:
Spoiler:
Use this Stratagem in the Fight phase, when an enemy unit is selected to fight. Select one WORLD EATERS CORE unit from your army that is within Engagement Range of that enemy unit. Until that enemy unit’s attacks have been resolved, each time a model in the selected unit is destroyed by a melee attack, if that model has not fought this phase, do not remove it from play. The destroyed model can fight after that enemy unit’s attacks have been resolved, and is then removed from play. If the selected WORLD EATERS unit is a Troops unit, this Stratagem costs 1CP; otherwise, it costs 2CP.

Desperate for Redemption
Spoiler:
Use this Stratagem in the Fight phase when a SISTERS REPENTIA unit from your army is targeted by a melee attack. Until the end of the phase, each time a model in this unit is destroyed by a melee attack, if that model has not fought this phase, do not remove it from play. The destroyed model can fight after the attacking model’s unit has finished making attacks. After doing so, any other rules that affect this model ‘when it is destroyed’ are triggered (if any), and then the model is removed from play.

Counter offensive:
Spoiler:
Use this Stratagem after an enemy unit has fought in this turn. Select one of your own eligible units and fight with it next.

I think you got it right.

Try not to charge multiple units of World Eaters at a time?

Looks correct.

Remember if your opponent plays "Blood Frenzy" you don't have to direct attacks at that unit if your unit charged "several units of World eaters"

Its even possible to play counter offensive on the same WE unit where blood frenzy was used. The unit hasnt fought yet.
