So I come looking for help because I am struggling on my own.

For a current project I want to kitbash a Buffalo - preferably an American bison for a helm ornament on one of my knights of the realm.

Does anyone know of a source that might be small enough to sit on top of the helm - doesn’t have to be full bodied.

Struggling about in Asmos territory.

You could try sculpting it with greenstuff, best I can find with a little contemplating is those 80s safari animals?

Saw some buffalos at Tetons, they are cool.
Leopold Helveine is right, I'd try cheap animal toys if you want to save money and have a unique piece.

Or dig into old toy box to find scale appropriate base animal
In this case I would take the knight helmet with me to the dollar, hobby or thrift store and compare it to the toys I find to see if the scale is a good fit. Even if there are no bison heads, could use Bovine type animal as the base to green-stuff sculpt bison over it.
I have done something similar. Needed a proper scaled bear for my dwarf cav and used cheap dog toy from dollar store as the base to sculpt over (at the time the dwarf bear-riders I found where way over my budget)

It all depends on weather you got time and want to save money, or got money and can't afford the time.

Always can 3D print detailed bison head that is exact the scale and the look that you need.
For that I'd hit the Daka printing section, I am sure we got folk who take commissions for a custom print.
