The Mek and the Trukks can ride together, enjoying a delightful 4+ cover save until they can get in contact. This army does not worry about its own objectives until late-game, so a few Boyz can zip onto one in a Trukk if need be or the Nobs can turbo and conga-line if need be, too. The idea here is bare-bones efficiency and ideally, enough mobile death to take down just about anything at 1500. To range up to 1750, 1850, and 2000, I would add some Battlewagons, perhaps, and eventually more Nobs.
Thoughts?

If you have all 4 trukks together to get a cover save then your army is going to be very packed in. A few templates and you'll hit something.
I think everything else with it is sound though 8)

You don't need to pack them together. Some can ride behind the Bikers and split off as they get into assault range of the opponent.

Might want to add some deffkoptas, or warbuggies to cover you as you advance, but also sticking to the theme of the army.

Bikers in front don't block LOS to side armour..

As long as I play it right, they can. Clearly, you have never seen the extended footprint of 10 Bikers going across the board at max 2" coherency. Trust me, I can cover a Trukk or two, no trouble. Besides, how many flankers are going to be gunning for me? Really?
As for buggies and Kopters - in testing they have never, ever worked for me. I avoid them like the plague.

Well if you have 10 bikes with 2" coherency thats going to be about 2 bikes blocking the side of the trukk, you need 50% of it covered to gain a cover save and they won't cover it all. Especially if spaced out 2" leaving a gap.
Er, I'll be aiming for those trukks so your orks have to foot slog. Trukk isn't hard to stop is it?
As for buggies and kopters, I have tried buggies and doubt I will but kopters I've found to be useful.

Often, I turn my bikers ever so slightly, as to provide the length of the base for coherency. This gives me an extra half inch or so, maybe more. That gives me ~30-35" to cover one or two Trukks from the front and maybe side. Plenty! A big "L" shape should do fine at covering a vulnerable side and the long section can cover the front of the Trukks no problem.
As for Buggies, they are AV10, which is garbage considering their specific role. Kopters are slightly better, but I would have to try and find room for them in this list, as it is very lean already.
