I'd consider an upgrade "throw rocks", a missile attack with a range of 18", uses his BS, and does D6 S5 hits, or something. Not good enough to change his function, but it gives him something to do.
And it is, of course, one of the most iconic concepts of Giants in the fantasy genre.
The Warrior's one can just stick to taking Marks; that's enough versatility (though maybe they should be better/different). The Ogre one could...I dunno. Take a Leadbelcher cannon. The Beastman version can eat dudes and regain wounds better. Or ambush.

I'm all for new ideas. Maybe some of them will be Oh-God-In-Heaven-Why-Did-They-Make-This-So-Good broken. And if they are...I'd just get rid of it or tone it down.
I'm not too worried; I doubt the hobby of Warhammer will cease to exist if we make a mistake or two.
