So yeah, I have the urge to field some cavalry. REAL cavalry, as in men on horses with sabres, not tooling around in mini-tanks.
The problem is: I have always struggled with modelling horses, particularly in getting the colors right. Anyone got any tips as to which paints to use? I have heard of special "horse" sets of paints, but I cant find them now. I've also heard (I cant remember where from) that they should be undercoated blue.
Can anyoe help?

I just use random shades of brown, with spare mixing of grey, white, and black. I intentionally don't pay attention to the shades, with the only except that I won't use my "leather" color that my saddles are.
This ensures that each horse ends up a little different =)
Don't forget white for the socks and stars!
Source: I have painted lots of cavalry recently and this is only the past year.

There is a very good guide in White Dwarf May 2013. Lists painting Black, Palomino, Dun, Dark Bay , Dapple Grey, Appaloosa, Light Bay and White horses.
I painted a couple of horses recently pulling a 15mm scratch built ambulance and followed the technique from above.

The horses above pulling the ambulance were Baneblade Brown base coat, Tail & mane Rhinox hide, wash of Agrax Earthshade,then a Baneblade brown/Karak stone layre and finally KArak stone highlight.

Also, make sure you don't give the horses human-looking eyes. I've seen a few cavalry models with horses that had large white eyes with small pupils. It looked very strange.

Very cool. Ill try and dig out that copy of white dwarf too.
