Can someone please explain how their drybrushed highlights look soooo crisp?

Probably the amount of paint Emma has on the brush? That or she went and neatened things up after, maybe?

Yeah, probably. I'm just jealous. Would doing a drybrush on hard edges and then cleaning up be good for vehicle highlights?

Depends on the look you're going for. I don't mind, leaving it post clean up to be honest.
