So I am about to start a Space Wolves army, and I am selling some of my old Ultra Marine army, so I was wondering if I can legally play the AoBR models in my Space Wolves force? And if I can, is it really practical?

Of course you can use them. They would probably be grey hunters(the infantry), a dreadnought, and a wolf lord. "count as" is a great thing.

In the embrace of the great Nurgle, I am no longer afraid, for with His pestilential favour I have become that which I once most feared: Death.

You can [the funny thing is you can create a more leagal SW force than a Marine one]
Terminator Sargent=Logan
3 of the other Terminators=Wolf Guard
Commander: Wolf Gard Pack Leader
Tac Squad=Greay Hunters with 1 Flamer
Tack Sargent: Long Fang Pack Leader
Tack Squad memeber with Missile Launcher=Long Fang with Missile Launcher
Dread=Dread

and you can trade the Orks for more

I am going to aim to get a Space Wolf tac. squad and the codex, so is that enough to make some easy and convincing conversions to the Black Reach models to make them look like good Space Wolves, not marines posing as Wolves?

The black reach ones are poor for modifying. The arms with gun and backpack come off and that's it. You can't put any of the special space wolf stuff on them aside from a few wolf tails and accessorys. So if you put on the SW back packs and trimmings you will get them to look some what space wolf, but not completely SW. I'm using my DA vets that I hadn't painted as SW by switching the arms, shoulder pads and back packs. Then putting their arms and shoulder pads on the SW. Then buying the bikes and assault squads as well as more Sw packs and switching as many arms as I can. So, if you want to do a lot of converting I'd do the basic space marines and not the black reach ones, but if you want cheaper with less detail go black reach. My black reach dreadnought looks great with some DA bits from the upgrade sprue and some details scraped off. So you can modify them to get them to look really good, but it will take a bit of work.

The AoBR set can definitely be converted. Here are my AoBR terminators converted into Wolf Guard using the Space Wolves Pack:
