It's a pretty hilarious idea. I'd go 2x 2 big shoota kans and 1x 3 rokkit kans myself, I feel like you need some Str8 punch while you waddle accross the board and it'll be much more manageable to keep in the kff.

Give one mob of Kans Rokkit launchas, we will kall them the Kar-Krushing Kans. Give the rest Grotzookas, we will kall them Man-Manglers.
Simply put the Kans are your anti-tank. Although at 500points I'd drop the mob of 2 and take a unit of shoota boyz instead of one of the Grot squads. Maybe actually break the sacred taboo and give the Nob Big choppa.
Also littlenibbler Orks aren't about armour saves.
Orks are about having too many models on the table, and wasting the other guy's time with your movement phase.
