Heres my potential 3000pt army list.
I know im going to get slated for using the COC but ive got the models around so might aswell use them

Looks like a solid list. The only thing that makes me pause is the 20 man TG unit. From my experience at the 2500 level the TG/slaan unit gets a lot of attention directed at it from shooting & magic. Even with lore of life and regrowth I'd be tempted to try and squeeze ~4 more bodies in that unit for a bit of extra padding.
I run a Stegodon instead of Saurus cav personally. I have het to use the cav in 8th ed. YMMV

With the Temple Guard, you could put the Iron Curse Icon on your champion and give the unit a 6+ ward to war machine fire.
With consciousness on the Slann, I can't imagine players would really want to fire Cannons at the unit as they wont do much to the Slann, but the extra save won't hurt your TG for 5 points.
I am not particularly fond of the Cav unit either, but the other option (Steg) also tends to receive heavy fire. I'd still personally use the Steg, but that really is up to you as Ramon said.

A single steg is suicide, run at least two or run none. At least thats what happens against any list with warmachines in it, you can usually get CC by turn 2 so if you can give the enemy two stegs he's unlikely to kill both. At 3k i run three or none.

Do you really need higher state the slann alredy gets a 2+ "look out frog" save, and you should consider getting him the standard of discipline its literally abusive what slann can do with it

Honestly i think the standard of discipline is a waste.
With cold blooded rerollable 9 the odds of failing are like 1/400
With cold blooded rerollable 10 the odds are like, 1/443

Edit: Besides thats one extra point to have if you loose steadfast and the LD starts dropping.

True, but if your temple guard are all dead (the only way you can lose stubborn), your slann is already in a really really bad spot.

Yeah that was the point i was making...
Slann with temple guard arent steadfast, they are stubborn, which means as long as one TG is alive you roll on the slanns LD for breaking.
Once that last TG dies and its the lone slann vs the big nasty mob, its pretty much over for him.
