Just started to play them myself so not much I can advise on. I do have one question for you, why no musicians? I find them very useful.

Just to conserve points. 30 pts ends up being a big deal in an army where everything is, generally, overcosted.

All of the above are good solid builds, not much else to say really, could really do with a shield on your BSB though
28 Dwarf Warriors (Standard; GW) 290
29 Dwarf Warriors (Standard; GW) 300
29 Dwarf Warriors (Standard; GW) 300
I think you should change one block to either Hammerers or Ironbreakers, another block should be changed to 2 units of xbows with GW
Gyrocopter x3 240
Again, very good, not a lot to say. Maybe consider vanguard option.
Grudgethrower (Rune of Accuracy; Rune of Penetrating) 145
Grudgethrower (Rune of Accuracy; Rune of Penetrating; Rune of Burning) 150
I'm not really a fan of these but the load outs look to be very devastating. They will also help against point denial lists. Maybe consider replacing one of them with a flame cannon
Cannon (Rune of Forging) 145
Cannon (Rune of Forging; Rune of Burning) 150
Good again. Pretty standard load outs.
Organ Gun (Rune of Burning) 125
Organ Gun 120
Just need the Runes of accuracy and forging to really make them synergies that compliment those Master engineers

All in all I like the list and it seems very powerful for a Dawi army. My only other worry would be that it lacks in defense from magical armies. If you dropped a unit of Warriors and took some Hammerers/Iron breakers you could have the Master rune of Valaya to help with those dispelling attempts and remains in play spells. After all the changes have been made, if you still have points to spare, you should get some equipment for those Master Engineers.

Personally i would replace the grudge throwers and one unit of dwarfs with a unit of iron breakers or hammerers as in 2500 point other players will bring a big block of what i like to call big hitters which will cut through the warriors…..

also rune up the war machines instead of engineers and use the points for a banner with the bigger block described above.

3 gyrocopters is perfect, you will find they totally are worth the points as a unit of three behind enemy lines will destroy anything especially units which are T3 and poor armour i.e. most elves.

good luck and let us all know that you find works best, as a dwarf player myself i find it useful to know.

Grudge Throwers are great. The Rune of Penetration is just too expensive, though.

I think the first list is much stronger.

Forging on Cannons, Accuracy on the Organ Guns.

Warriors are good. But so are Longbeard and Hammerers. And if you're really looking to be competitive, Quarrelers are the best way to fill out Core.

Something like:

20 Quarrelers + great weapons + musician + standard (300)
20 Quarrelers + great weapons + musician + standard (300)

30 Hammerers + musician + standard (440)

--drop two of the Grudge Throwers. That'll give you a few points to add a Rune of Accuracy to one of those Guns, with some left over.

Musicians are really not that much for what they do. +1CR on a tie is okay. +1 to Rally is neat. But Swift Reform? In a M3 army? Yes. Potential game-changer, right there.

- really look at Hammerers versus Warriors 4pts per model more for +1WS, +1S, +1A, and Stubborn? If that's not worth it, nothing is.
Getting them a Runic banner would be nice, but points are tight as-is.

It's a pretty standard Dwarf list. I usually see these types of builds doing consistently well. Rarely amazing, rarely terrible.
