They look awesome and being able to field an army of the best of the best infantry in the game is what got me playing 40k 12 years ago. No matter how weak they are depending on the edition, I always try to work a squad or two into my list.

Intensely tough question! There are so many good choices.
Right now I'd say Kaballites, but Sternguard are a top choice as well. Assault Termies would also have to top my list. But if I only get one, it's going to have to go to the Inquisitorial Warband. So much diversity! So much opportunity for horror!

Death Korps Grenadiers, first models I had, pretty at that, average rules, but I really like the idea of veteran guardsmen with guns that punch through Power Armor like its not even there. Always the ones to lead a Kriegsmen charge, not meant to survive but at least 20% does.

Line them up against a squad of anything else in the game and they're more than likely to end up on the bottom of the matchup, but it's clear which side has more intestinal fortitude. Guardsmen die standing.

Uh, well.
I'd have to see I really like the Necron Overlord models. They have that elegance and poise attached to them, a long with a the fear they impose of going up against a 9 ft tall homicidal robot.
Most of the Necron range are pretty awesome.. aesthetically for me.
As for competitive choice, that always impresses, the humble annihilation barge. Nothing beats rolling 9 hits from a single volley, of a single weapon.
I know you said no Forgeworld, but I also really like the Nightshroud and Tesseract Ark. Both of them aesthetically, and the Tesseract Ark is pretty awesome competitively.

Lictors, no matter how hard GW nerf them in every codex, the models I will never not have a soft spot for. Plus the fluff about them is brilliant, brutal assassins that could be 2 meters away from you and you wouldn't even know they were there. Plus feeder tendrils, those things are just nasty

I've only got 1 army at the moment (Tau) so my functionality choice has to goto the Riptide but I decided to collect them because I like the way Fire Warriors look and wanted a whole mess of them. More specifically I'd have to go with Cadre Fireblade.
The next army I collect is going to be Tyranids (as soon as the new codex drops) because I think almost all their models look awesome.

Game wise its my Dire Avengers. I find my 10 man squads with PW/SS have served me so well. I also dig they way they look.
The model I always pick up and want to play the most are my Striking Scorpions. I love how they look. My absolute favorite GW model. Game wise however not so much. Hard to field a S3 T3 assault unit in 6th.

Daemon Prince. I absolutely adore to model, and has taken me from playing C:CSM to C:CD Tzeentch flying circus. I have a very vivid imagination and when he gets into combat with a squad of Fire Warriors (my main buddy plays Tau exclusively) I just imagine him ripping apart the entire squad one by one... It's very therapeutic.

For cool, looks, and overall love factor, I would have to say Deathwing Terminators. They are the reason I play Dark Angels. But they are also incredibly mediocre.
In terms of favorite unit, I would probably say burna boyz. I tend not to field them a lot right now, but I used to have a great time. They have resulted in some of the most overkill hilarious moments I have ever had.

Lictors for me too. Still have my talons crossed that they'll be a good unit a couple of weeks from now. I'll make sure they hit the table from time to time even if they're not, but it would be nice for them to actually be badasses on the board and not just in my head.

Ten man squad of Sternguard with eight combi-flamers, two heavy flamers and a LC, led by Chaplain Cassius. Fluff wise, it's awesome, games wise, still awesome. Model wise? I used converted Tyrannic War Veterans, the plastic Sternguard and a converted Chronus, heaped with Tyranid trophies, DW pauldrons, a spare TWV pauldron and some cool scopes and stuff.

I'd say Thousand Sons both in rules and model. First off they look unique compared to every other Marine unit (Chaos or loyalist.) Then they have great rules for bolters and inv saves. Then no matter how you paint them no questions need be asked what they are. I also like the sorta Eqyptian look as well.

I'm going to be boring and say the Humble Tactical Squad. They form the basis of any marine force, can drop in from orbit in drop pods, or roll across the field in a metal box. from a modelling stand point they can be as ornate or plain as their owner desiers and the Veteran Sgt can become a character in his own right.
The new rules make them all the more diverse with the abilty to take spec. and heavy weapons in 5 man squads (why that was ever dropped is beyond me!) and all kinds of ways to customise the Sgt. Plus new chaoter tactics allowing them to scout (Raven Gurad) re-roll 50% of misses (Imperial Fists) or get a FNP save (Iron Hands) makes them one of my favorite units above all else. Never leave home without one.

Throughout the current meta, my favorite unit is the Crisis Suit. Though I do not play Tau, I do love those crisis suits, going so far as to make some for my brother who does play Tau. I just love their versatility.
As for the armies I do own in the current meta (chaos space marines and Necrons), I'd have to say that my favorite unit is the (heavy) destroyer. Been loving those things since 4th ed and though with the new codex I initially dropped them from my list, I recently came back to them. They always have and always will be my babies.
Now, if one asked what has been my favorite unit throughout my time playing 40k, oldcron lord with Nightmare shroud, veil of darkness, and warscythe. That loadout has brought me many a win and even more moments of straight up hilarity (like playing ping pong against a commissar with an IG squad). I wish I could make that loadout in the newcron codex (Despairteks attached to an overlord just isn't the same...)

He started my army, there's a whole story to it.
In 5th ed he wrecked face so badly I once asked my opponent to redeploy his entire army, and ended up tabling him twice.
I now plan to use him as Be'lakor, 'cause I've gotten sentimental (with opponent's agreement, ofc).

Ork Nobz. The unit has character in spades, awesome models, a powerful set of rules and they fulfill a fun and useful role. I named all mine (along with all other character level models in the army) and took great pleasure in 5th rolling around the place and krumping stuff. When so many models can be relatively faceless, this group of wannabe warbosses stand forth as a bastion of individuality.
Not so keen on the biker version, mainly because I never owned them.

I like the Dreadnought Walkers myself, even though I've never really played around with a proper one. They have good fluff, I like how the have to be deactivated and kept in a storage shrine, and even just the regular Dreads are highly prized artefacts.
I wonder why there aren't more named characters in dreadnought form? Sure there is Bjorn, but you'd think the other chapters would have at least a special character dread. Especially chapters like the BA who get the furioso.
I'm also very partial to the Predator tank.

I've got to go with Rubric marines here. Such a cool concept. Such a shame they've pretty much always been such a bad unit, or at least, far too expensive for what they do. (I still have a 1K Sons army though.)
I'm also really fond of Grey Hunters -they're just badass-, and various Eldar aspect warriors (Dark Reapers are my current favorite, but it varies from time to time).
And Praetorians (the Guard army). They're also badass.
