Well after coming off *another* anime binge I figured I ought to see what you guys watch and maybe check them out for myself.
My personal favorites are:

I'm not much of a fan of anime. I think it's safe to say that Cowboy Bebop is a pretty damn good show, though, regardless of genre.
There was an episode of GitS: Stand Alone Complex that really got to me. It was the one about a serial killer who would force his victims to see what he was doing to them through his eyes. Pretty...memorable.

naruto ive got to say is pretty good...except for most of the humor,its horrible.
spice and wolf. never finished it,but from all i watched it was good.
full metal alchemist. really good. one of the 1st i ever watched.

It's been so long since I watched it, but I remember "Iria: Zeiram the Animation" being pretty fun. I think it was the character designs that appealed to me the most.

I actually tend to find Japanese humor rather bland. Most of the jokes are the same ones over and over again and really over the top. Not my style. Humor is best when it is subtle imo.

Ghost in the Shell
The show about samurais with the witty guy who dressed in blue, and a dude with wild hair who dressed in red. It was like...cowboy bebop. Sort of. I think there was a really hot chick in it
-Cowboy Bebop, come to think of it.
-Bleach. I lost track after they invaded the espada world and rukia killed the gross dude.
-Naruto, although I lost track after the fight with sasuke and the rock hokage guy.

Listed in order i remember them, as i enjoy all of them equally.
1) Evangelion
The Original series and films, haven't seen the new stuff yet, but don't do what i did and watch it over and over, life gets very grey.
2) Cowboy Bebop Watch it, if only for Spike Spegal's hilarity and manly voice.... what?
3) Full Metal Alchemist
Pure awesome, again, haven't seen the new stuff, but the original is well worth the time (Major Armstrong rules)
4) Ghost in the Shell, Stand Alone Complex (1&2)
Kinda hard to follow unless you already understand sociology, Asian philosophy and can translate their technobabble, but the action is well animated and the characters deep and enjoyable, (especially once the Major discovers Trousers in season 2.)
