Would using IG chimeras be okay to use as ork trucks?

Provided you make them suitably Orky I would not have a problem with it. If you did not make them Orky I would probably bust on you for it, but in game terms not have a problem with that either.

Chimeras are better as looted wagons. That being said, if you can make a Chimera match the size and shape of an ork trukk, have it open-topped and match wargear/weapons, we'd probably be cool.

It would definitely be orkyfied. I wasn't sure if it would really work because I think the chimera USA smaller than the actual truck model.
I'm just starting orks and I really don't care for the ork truck model and am trying to find suitable vehicles that could be looted instead. Would there be a better vehicle?
Maybe a rhino?

Not entirely sure, as I don't own any trukks. If I was you, I'd get some measurements or head down to the LGS and see if anyone has any and do some comparisons. With some orky bits added on you can bulk out smaller vehicles a bit.

Yup should be fine but I would suggest using and investing in some plasicard and use any spare ork bits from other kits or combine different races bits to make them look orky! For instance use bits from the chimera too with other orky bits.

Anything can be used as a Looted Wagon, the only thing I would agrue about using something like a Hammerhead or a Falcon grav tank, give it some kind of wheels or treads, as Looted Wagons they are no longer skimmers and should have some kind of method of movement.
On that note I've seen a looted Falcon being carried by a ton of grots underneath, that was good enough for me.

Looted Salamanders (the open-topped Iguard chimera hull) is pretty common as trukks. It isn't drastically smaller, but usually it is generally accepted as long as it is open-topped and converted.

Well, that's an easy tank to loot then!!
And would LR work as battlewagons?
And are there like unofficial rules when it come to using looted vehicles for orks? Or is it basically as long as it's believable and looks good ante not confusing as what's what its all good?

Tau vehicles look great looted. Adding wheels and painting them red gives them race car look.)

Codex entry: "[looted wagons] may even be anti-gravity skiffs that the Orks have not had a proper chance to crash into the ground yet"
You can use anything you want, even Tau vehicles.

I have seen a large number of Land Raider as Battlewagons and am not a fan. They've always been done well, but they significantly change the profile of the vehicle. BWs have the severe disadvantage of a small front arc which mitigates their armor 14. Doubling the front arc size with a LR base is a tough sell.

Greebo had spent an irritating two minutes in that box. Technically, a cat locked in a box may be alive or it may be dead. You never know until you look. In fact, the mere act of opening the box will determine the state of the cat, although in this case there were three determinate states the cat could be in: these being Alive, Dead, and Bloody Furious.
Orks always ride in single file to hide their strength and numbers.

Now that would be hilarious and cool. I would love to see two Battlewagons made out of one Land Raider that was hastily chopped in half with armor plating added to the middle.

LOL! I'm thinking of making a looted battlewagon in the future. For size fluff I may cut a quarter off it. I'll try to remember to PM you when I start it on my blog. (link in signature!)

Up until a few years ago there wasn't a BW kit and it was perfectly acceptable to loot LRs and turn them into BWs. I still have mine as well as my Forgeworld Battlewagon and use them regularly. Since it was originally a GW kit and GW allowed LRs to be looted I don't see an issue.
Kind of like saying you now have to rebase all your old terminators otherwise they aren't legal to use anymore.

Nah, that's a different issue. There are plenty of things like this in 40k and they should be no surprise to anyone. Should you be forced to replace old models/bases? Absolutely not. Should you update them to the new edition if you have the time and resources? Absolutely.
Is a LR BW conversion legal? Sure. Should you try to match the profile of the official model? Yes. (Also, keep in mind that a Looted Land Raider is completely different from a LR BW conversion. You need to match the rules for fire points, weapons, etc on a conversion. Looted has a lot less restrictions.)
Are the old gorkamorka rollerskate trukks legal? Sure. Should you replace them or bulk them out anyways? Yes.
Is the original RT Avatar a legal model to represent a 5th edition Avatar? Sure. Should you replace it with something more representative of the current avatar size? Yes.
And yes, you should rebase your old terminators. Are they legal with the old bases? Sure. Should you rebase them anyways? Yes.

There is no reason you "should" do anything not required by the rulebook. Now if GW were to come out and say that only the official kit is acceptable and/or conversions are not allowed then that would be a different story. As long as it is a legal model by GW rules then aesthetics or personal preferences don't really count for anything.
Time and rescources have nothing to do with this.

Your first sentence is completely true.
You aren't required to paint your models. Should you paint your models?
You aren't required to be a good sportsman. Should you be a dick?
You aren't required to use the exact models for anything by the power of counts as. Should you use this to your advantage?
You aren't required to use unloaded dice. Should you cheat?
You aren't required to use the 'correct' bases (based on newest releases). Should you update?
The answer to all of those can be no or yes based on your personal preference. That being said, the answer to the most important question 'Do people want to play with me?' may also be answered by your answers to those questions.

I thought that the shape of the vehicle was irrelevant and you just made a box around it and divided it along the diagonals (Though I am not sure if the rolla counts as part of the vehicle's length). Am I mistaken, or are you just talking about how the Battlewagon is longer than it is wide?

The body of it should be red but the drive train/axles and the back deck part should be blue. Then you will be expected to order your Orks to "Roll Out!"
