As the title says. Are there any armies you haven't played against ? If so what are they and why do you want to play against them?
For me, there are only three armies that come to mind. Demons and Seige of Vraks Traitors and Sisters. I'd love to play against Demons a few times just to test my ability as a commander and to see what the hype is about.
Sisters because around here they are as rare as a black and gold diamond. They look like a blast to play as, just don't know what it's like to play against them. I'm guessing it depends on how good the SoB player is., regardless I'd love to find out.
Traitor Guard from Vraks. I've seen the models in a game I wasn't active in. Looked so, so, so cool but other than that I know nothing about them.
How about you ladies and gents?

I haven't played against a little-bug Tyranid list in a long time. The Nid-zilla thing is tired, and it's a direct outcome of MCs being far too efficient for their points.

Martel, thats dsappointing. I sent you a PM with the same message. The only Marines I've played with Bugs to this point have been a nemesis GK list and a ravenwing list. I tabled the ravenwing by the start of T5. Lost against the GK by 3. Good luck finding those grubbins.

More like a direct result of Tyranid Infantry being a joke - When gaunts get the speed or saves to actually make it to their own shooting range before being mowed down you'll see them being used again.
I'd like to face a Tempestus Scions force or a pure White Scars army.
I've never seen the Scions in use and every White Scars army I've faced is allied with Space Wolves for Thunderwolves/Bikes so I'd really like to see how they go as a non allied force, apparently they're quicker without the mutts but don't hit as hard.

I have an old issue of White Dwarf back when they released Dreadfleet that had some special Adeptus Sororitas missions, including a mission where the SoB player must defend a sacred relic from their opponent that gives them buffs as long as it isn't defiled by the other player if they get into base contact with it. Would be great if they got some love shown to them.
Still have never faced or even seen an SoB army in real life. Feels pretty sad thinking about it  Wouldn't mind owning some either, if they ever decided to release them in plastic
I won't hold my breath on that one

I've seen White Scars armies......they're just never painted like White Scars lol. Why be one chapter when you can play EVERYMARINES.
I personally would like to fight Dark Eldar. I don't think anyone in any store in my area plays them. Heck I'd even be willing to fight that 5 talos BS.

One word, my friend. Venomthropes. They're as much a linchpin of my lists as synapse creatures.
Airborne assault Scions are actually a pretty good match up for marines in a casual environment. Their taurox especially put out a crazy amount of dakka too. Nobody was running hand-made though. Really fun.to play against. Probably not as much with swarm nids lol

The Talos formations really isn't that bad. If you've got a decent amount of dakka or mobility you can handle it no problem. Can't think of a mono-dark eldar list I've had trouble with. No brag, just fact. They're pretty competitive in maelstrom games. Especially on ruined city boards.

Basically anything Xenos except Tau.
Hell I'd even play against WK/Scatbike spam Eldar even though I'd almost surely lose.
It's been so long I can't even remember for sure the last time I faced a non-Tau xenos army... maybe Nids toward the start of 6th?

Even a mobile cover save is a bit laughable considering the amount of armies that carry Ignores Cover without a second thought.

I haven't ever fought Sisters, or Dark Eldar. Maybe other SM Chapters, I don't keep track of White Scars or Blood Angels or all those.

I play Sisters, IG, and Orks. I have owned in the past a small force of Marines, but sold them save for the first model I ever painted (tactical w/flamer). TBH, of the ones I haven't played, only Tau and Eldar interest me. And only mildly so. Tau because I like gunlines... but IG do it in what is, to me, a more interesting way so eh. And Eldar because psychic ninja space elves are cool. But I'm not sure what I'd even make with them any more. Maybe a guardian based force that's almost a gunline on its own, supported by psykers. Of the two, I'm more likely to start Eldar.

Pure SM Vehicle list (I played IG Armored company and all-dreadnought lists before)

Tyranid Gargantuan Creatures

Not an army as such but I wouldn't mind having a go taking on Aetos'rau'keres (apologies if spelling is wrong) with a similar point army. I have his rules in IA13 and I whince each time I read them.

Admech, harlequins, sisters of battle, daemonkin, imperial knights(as an army. Individual knight yes), grey knights, pretty much every FW army.
Don't have any particular "want to face" from those though as they wouldn't fit to our narrative.

As for armies I'd like to play I've always found the idea of a mobilie infantry/battlesuit farsight enclance army to be appealing. Never got around to build one though. No riptides/stormsurges or other such nasties, just a bunch of fire warriors and battle suits with the additions of a few transports and tanks.
I've faced all armies there are in 40k, but I always found orks to be the most fun to fight. There's always many fun scenes and lots of gore so I'll stick with that. I've also always found the idea of feral orks appealing, a bunch of squiggoths loaded with orks. Never faced that but I guess it's my close second on "armies I'd like to build".
fought a kroot army in a 1000p game once, that was neat. The old chapter approved one.

I've never played 1 on 1 against Nids, Crons, Orks or Eldar.
I'd like to play the first three.  I play old school guardsmen, and nothing says Guard like facing down never ending hordes of aliens.

Yeah, I have a few lists in mind that I've always wanted to have a shot against.
Firstly: A certain TauDar list - you know the one with about 40-50 Warp Spiders, Wraithknight and Riptide Wings. I'm probably going to face this soon at some point, but since it's been heralded as the pinnacle of cheese I'd love to have a pop at it.
Secondly: Sisters of Battle - For such a cool and interesting army, I'd love to face off against it and see if I would like to start an army of them myself!
Lastly: Nids, never played against any variant of them...

Armies I'd like to fight I never/rarely have:
-Tyranids w/ a mix of Swarmlord, MCs, Gaunts, and NO Flyrants
-Iron Hands and Ad Mech. Fought this guy once, it was a fun match
-Sisters of Battle, awfully rare
-Other Daemons, I'm the only Daemons player
-Dark Eldar that bring things other than Raiders
