So you cannot upgrade them with weapons or a boss. Since they are a class of mutant and it does not restrict it, does it mean they can have a chaos icon? Also can Asp Champs be attached to a zombie squad?

An aspiring champion may join plague zombie units. As for the icon, look at what section the icon is listed in. If it's listed in or with weapon options, such as flamers and heavy stubberss, then it is itself a one handed weapon, and plague zombies cannot take it. However if it's a seperate entry by itself, then I see no issue.

you'll never want three icons, as they act like weapons and therefor, if the model dies, another model simply picks it up, therefor, you only ever need one, as it will be the second to last model to die, the last being the boss with the fist

In the fluff world, yes. In game terms, it means that the last model to die in any squad will be the guy with the lascannon/ powerfist. It's the joys of you yourself being able to pick who dies. The only ways to kill a model with a heavy weapon/ power weapon before members of the other squad is to A) use an assassin, or B) Position yourself so that he is the only model within your guns range/ line of sight (Also known as being a cheesy git)

You missed another way you can lose a weapon: torrent of fire. Two icons can help deal with torrent of fire for a small mutant squad but its better to just have a big squad. A big mutant squad can take advantage of two icons, by having two spots to summon from that are relatively far apart. Otherwise 1 icon is fine.
