Honestly the only thing I can think of as a holy grail miniature today is a Halbarad with banner to go with my Grey Company. I can't afford the $500 its around for online, and I just don't like the other sculpt as much (plus its not exactly cheap either). Really hoping GW bring it back
In terms of what I own, it's probably my Knight Models Watchmen. I managed to snag the last set in Australia at a time where they'd been OOP for a while and they're pretty rare now. Happy to have them, and I won't let them go

A guy on a Tau message board had one of apparently only two in existence. I've been checking eBay on and off for years hoping he has had a kid that needs to go to college.

SDBB's rarity had far more to do with its very limited release window. It was only available for about 6 months, compared to three+ years for the original BB/ SS kits. SDBB was $110 compared to the regular $60 kits. Parts count was MUCH higher and was the reason for the cost.
And to stay on topic, I would early love one of the proto-Tyranid models shown in the Rogue Trader rulebook.

Probably the same as OP, the metal Gunship.
For a while you'd find 1 or 2 on eBay on any given day, but they all seemed to vanish into the warp since about 2017.
Other than that, maybe a second Gaunts Ghosts BL diorama. My first has a very shabby box, and unreadable certificate.

That - and the Daemonifuge, Eisenhorn and Ciapghas Cain dioramas - would be on my list if they weren't awful.

IIRC the citizens of the Empire were not part of Mordheim, but a general Fantasy release. I've got the duellists and the merchant + scribe somewhere.
May be wrong, but this was supposed to be part of an ongoing character series that never really took off, based on the art from the Blood on the Reik background book.

I'd assumed that they - as well as the other character pieces such as the "animosity" set or the goblin chasing / being chased by squigs - were trainee pieces that were good enough to be released. Same with some of the Specialist Games releases.

Not sure if it can be considered a "holy grail miniature" but I just managed to get the Imperial space marine miniature for £15 after searching for MONTHS.
Ok, I know it's not exactly old or really rare, but Christ, trying to find one new in sprue was the hardest for under £50, and painted examples ranged from the unsalvageable or so well painted it wouldn't feel right to strip it.
Just glad the search was over, thanks to a FLGS player clearing out his collection of grey plastic he forgot he had in a cupboard in his house!

Ideally, I'd prefer it being constructed already, as the idea of putting together larger metal models scares me, but unpainted so I can make it whatever color I want.

I'd love to get my hands on Hombre Toro from the Sphere Wars.
It was a great sculpt and I really, really regret not buying one back in the day.
I'd also love a set of IG Kaskarin too. When they were on Made to Order a while back I didn't realise they were only available for a week!

i have this guy from back when he first came out. always held together quite well despite being metal and not pinned or anything. its on my list to tear down strip and repaint soon

The Kasrkin are lovely. The Made to Order finally allowed me to get the third squad I wanted, so I can have a full Kasrkin platoon to add to my Cadian infantry company.

The Wizards, Dungeon Denizens, and Minotaurs from Talisman/Warhammer Quest. They were available in small $8 "toy boxes" back in the 2000's, but now like everything else out of print the price has shot through the roof, regardless of desirability. Ideally I'd like the version of the Minotaurs that came boxed with 4 small models that were perfect to build swarms with. Just not wanting them enough to pay the $60+ asking prices I keep seeing on evilbay.

I'm missing three of the adventurers from 3rd edition Talisman (the '90s one with Wayne England artwork and plastic minis from Warhammer). At the moment, though, my "holy grail" is the clear cockpit canopy and the frame pieces for a Valkyrie. I wouldn't have thought they were so hard to find, but there you go ...

I have 4 of the old metal Doomseekers from WHFB 6th ed (i think). The slayers with the chain axes. I with i would have gotten the Goblin hewer as well. Oh well.
The other one is a bad ass dragon diaromma I made, Cang the Implacable, which was a limited edition CMON cast.

Dude I own a similar miniature. I'm not sure if it's this one but it's a vampire with a cloak and a similar pose! I don't remember the sword though.

I have a few "holy grails", mostly to fill in gaps of my GW board games. I tend to find though that if I see something at a reasonable price I haven't got the money to buy it, but when I do have the money what I'm after is at a ridiculous price..
My current "holy grail" list is this though -
The Genestealer patriarch on the throne with magus, used in Space Hulk 1st edition. Seen a few a on evilbay at stupid prices...
The miniatures from the 2 Warhammer Quest (1995) expansions. Again stupid prices on evilbay.
Not to fill a gap or anything but I'd also like a better barbarian miniature for Warhammer Quest (1995), I just don't like the one that comes in the core box - looks like GW were inspired by Christopher Lambert in Highlander. I've looked everywhere but cannot find a sculpt that I like the look of, that fits GW's 28mm heroic scale (I bought a couple of metal "Conan" like sculpts from Reaper, but they're woefully undersized in comparison to GW's models), and looks like the guy in the Warhammer Quest iOS/Android/PC game. I tried making one myself out of bits from a sprue of Chaos Maruaders but failed miserably - the bodies and legs just aren't posed right and look all wrong for a dungeon crawling barbarian when you add the arms/head/sword/shield, and they're not very well detailed.
A full range of plastic new tool Steel Legion models would be nice, but I guess that's more of a "wishlist" thing than a "holy grail"...
I've also been looking for a Game Of Thrones/Skyrim style dragon (yes, I know, they're Wyverns), most of the sculpts I've seen just don't have the right look or aren't big enough...

Heresy Miniatures' Madame, a big nasty daemon model that I covet. It's crazy expensive and I'd never be able to use it in the Warhammer circles I'm in. I blew my budget for it on a Hastur model from Cthulhu Wars right before my gaming group decided it was GW models or the highway. Having coveted that model and now it's just a display piece I'm leery of giving in to my urge for more expensive, decorative resin.

I haven't really had a holy grail mini outside of trying to get my hands on the Eldar Bonesinger which I'm trawling eBay for, but more recently, the old metal 5th edition Dark Eldar Archon is one I really want. They're hard to come by these days and they're damn expensive when they do pop up.
