Well, I've decided to allow myself to purchase the DKoK grenadiers sometime this summer, but the sepcial weapon selection makes me sad.  I'm not particularly fond of the flamer/grenade launcher configuration.  While a small part of me dies every time I think about taking knife to such lovely (and expensive) models, I just may have to do some converting (my only other options being to buy or trade for different weapons, and even then I'm out of luck if I want plasma guns...)

Does anyone have any experience trying to give the grenadier special weapon troopers different weapons?  Or, if I emailed and asked nicely, do you think the Forgeworld folks would be kind enough to modify the squad slightly (such as giving me 2 flamers instead of flamer/grenade launcher)?

Resin isn't much harder to work with than plastic. It's just a bit more brittle. The main issue you'll have is a lack of parts if you only order a single unit. The DKoK models are smaller than other guard models, so conversions from other sources stand out. The easiest thing would be to order the Elysian Weapon Pack or the DKoK Command squad for the pieces you want and be careful repositioning the arms. Or just wait to see if they release the models you want.

So far Dkok Grenadiers have seperate packs that cover heavy stubber and melta gun.

However if you really wanted these to have other weapons you could buy the Junior officer command squad, that has dkok arms with plasma and melta.

then if you don't want the models after you've swapped the arms (put the flamer and grenade launcher in the command squad pack) sell them on ebay.

FW will not sell individual components like GW sadly.
