Does your lord choice always have to be your general? I saw somewhere that someone had a Chaos Lord but an Aspiring Champion was the General. IDK?

Is it not highest leadership character = general? Or your choice, in the case of a tie.

Yup. Highest LD is always the General, and you can choose if there’s a tie. There are a few other exceptions out there, such as BSBs being forbidden from being the General, and certain other characters (like Alter Kindred WE Highborn or Nobles, and Dark Elf and Skaven Assassins).
I can’t think of a way you could have an Aspiring Champion be the General in an army with a Chaos Lord, but either an Aspiring or an Exalted could certainly be in an army with an Exalted Sorcerer, which is a Lord level character, but only has Ld8.

In a beast army you could conceivably have a wargor as general and chaos lord running around doing whatever. Right?
But that isn't the same as an actual AC generaling while the lord rampages.

Nope.
In a Hordes/Beasts/Daemons army the highest LD character (aside from BSBs) is the general (choose in the case of ties, of course), and the general is what determines what’s Core in your army. Mortals if he’s a Mortal, Beasts if he’s a Beast, Daemons if he’s a daemon. There are a few magic items/daemonic gifts to allow you to change this, though.
But you could have an Aspiring Champion lead an army which included a Beastlord, however, since the Beastlord only has Ld7, making it a Mortal army. It's tough to do it in reverse since the beast characters are lower LD.

Ahh I thought the army dictated what your general was, not that the general was picked the same way. Honestly I've not seen a chaos lord in a beast army before, but have seen XC / AC with a beastlord leading the force. Or more often, chaos sorcerers (generally with MoS) running in a beast army.
