If I put a fighty character or a Hail of Doom Arrow Delivery system on
a fighting character, is it worth it to lose Fast Cavalry to put him on a stag
for the extra attacks? Am I better off fielding it as a solo fighter on cavalry,
or putting him on a steed and running with the Wild Riders?

The Stag is relatively hitty (2xws5 str 5 attacks), so it's not a bad choice. Losing the fast cav isn't too big an issue, as even with the monster, the wildriders will still zip around 9/18. Bottom line is that if you have the points to spend and like the model/have some neat conversion in mind etc., go for the stag.

I have never seen any wood elves riding a stag since the new book was released at around 15 tourneys... which says that its not a good option.

Can't help otherwise as have never seen it so can't say if good or not.

Well I kind of moved near Toronto, actually.

I would say Stag if you are using the 18" charge to rush him into combat.

Otherwise the steed if you want to run around/ keep your options open.

Most armies I've seen (and the ones I personally use) wield alter nobles as their combat characters and may spice things up a bit with a bsb or a guy in wardancers with the blades. Add in some magic defense and you'll notice you run out character slots. Therefore It's no wonder that you don't see stags or even wildrider heroes often in a tourney setting.

Hmm? Well that guy can bring terrorchecks to the middle of enemy army early in the game if terrain permits, but other than that he's not very good.

I own a WE on a Stag that I still have not put together. It may be fun to run one in a Tree Spirit type army but otherwise I don't think it's that competitive.

From what I've read of WE tactics the waywatcher noble appears to be mostly for deep infiltrating a hail of doom in where you want it, or terror as Chaoslord notes. Seems pretty dicey to me, just get him killed early.
