Wanted to verify my read:

The cover rules for infantry type models say that a model is in cover, even if totally exposed, as long as the shot is going between the vertical elements of a forest, or between models, the model counts as in cover.

It doesn't seem that the same rule works for Vehicles and MCs. They only count actual physical terrain (or other models) that actually cover them.

Is this correct?

yakface's 40K rule #1: Although the rules allow you to use modeling to your advantage, how badly do you need to win your toy soldier games?
yakface's 40K rule #2: Friends don't let friends start a MEQ army.
yakface's 40K rule #3: Codex does not ALWAYS trump the rulebook, so please don't say that!

Quick question on this also;

Would a Carnifex modeled hunched over (which is typical) be granted a cover save by Tyranid Warriors which are not typically too short?

You have to get down and look and see if 50% of the carnifex is obscured by the warriors. More then likely it would be but it is not a simple yes/no answer. Just watch out that you don't block the eyes of a dakka or gunfex with your screen (a drawback of being hunched over for sure).

Iorek: "Snoogums, you're right. Your arguments are irrelevant, and they sure as heck aren't going away."
