So I tried making my first Ork list with sorta the same concept I build my Eldar lists with...and I wanted to try a non-horde list...bare with me though I know nothing about orks...any help would be awesome =)

So I'm thinkin' the warboss and his meganobz ride in the battlewagon...it charges straight up with the warbuggies and distracts the enemy early on while my stormboyz deep strike and hopefully cause some distraction later (or just kill stuff)...lootas hide in back, boyz footslog probably behind the walkers.
If the enemy has an elite unit with multiple powerweapons I will have to avoid them with my meganobz/stormies...however a unit of powerfists wants to get beat up by zagstruk  ..I also have multiple anti-tank weapons, many power klaws/deff dread and 60 boyz; only thing I am worried about are maybe hordes, but I have no clue how to handle horde lists with orks besides well...my own horde. =/ maybe burna boyz? I am iffy on using templates with orks... BS 2=eww

Flamers don't roll to hit in 5th do they?
The only roll to hit templates orks have are kannonz basically. Lobbaz are Guess and Kill cannon is ordinance right?
I am not sure why tankbustaz and Burnaz both got a downgrade in 5th. Lootaz seem to do both their jobs better now, especially since both units can't get transported easily.
I am probably going to run burnaz with my dred for the Meks to repair if I run a full dred list. Other than that, I'll leave burning crap up to the kommandoz.

Burnas don't roll to hit, it's hard to miss with a huge jet of flame!
Another thing, why deepstrike stormboyz? Ever? They can be anywhere on the board in two turns, and can't assault on the turn they deepstrike. Also, the chance of mishaps is pretty harsh. Remember that stormboyz have a 24 inch potential charge range (12 move +d6 +6 charge), that's not to be sniffed at. Deepstrike is great for slow, shooty units. Stormboyz are a fast assault unit, it's a waste.
One thing to consider with this list is, that with a lack of numbers, it might be better to go for a speed freek style list, so you have the advantage of speed. Just substitute 20 boyz for 12 in a trukk. You might need to find some points from somewhere for more trukk squads, but it's worth thinking about.

Its not super hordey, but it still has a lot of bodies. I'd stick big shootas for more anti infantry shooting into the walking squads, or rokkits if you feel low on anti-tank. Its a good place to put them when you walking forward. It may not be worth running every turn forward. Especially if the guys in the back don't have the room to run when things eventually get clogged up.

Take out the deff 'dread and use the points to put in Ghaz. for 225 points hes incredible

Characters are nice and all, but they have never really been of any use for casual or tournaments.
Did 5th turn back into characterhammer? I liked not having ubermodels in competative play.

IMO,when using Meganobz as the hammer of your army,to replace the normal warboss with Grotznik,will significantaly boost the meganobz.
Thraka is also awesome.
In 5th,the restriction of taking charas has been obsoleted,u need NOT "agreement of opponent players" anymore

i will start with great army. there are alot of similaries with the 2 armys. you need to take big shoota every where you can. cause 3 shots with bs2 is 1 hit. every unit you have can take down a tank again TAKE ALOT OF BIG SHOOTAS!!!!!

He's got Zagstruk so they can assault they turn they deepstrike, with an in initiative order power klaw rather than initiative 1.
However, after that first charge he makes the unit suffer from not having a Power Klaw when taking a charge. Though the execution thing is good.
I like the list, but try running Ghaz and see how that goes. He'll make great use of your sloggin' Boyz with his Waaggh.
